Spinach and Beef Quiche | 菠菜牛肉批


Spinach with beef quiche coated with soft cheese, tastes great!

Spinach and Beef Quiche DIY recipe 菠菜牛肉鹹批 自家烘焙食譜

Ingredients | 材料 :
  • Yield: One 9" pie | 1個9"批

(A) Base | 批底 (Steps | 做法) :
60g Bread Flour | 高根麵粉
60g Cake Flour | 低根麵粉
25g Unsalted butter | 無鹽牛油
12g Ice water | 冰水 (約12g)
30g Beaten egg | 全蛋
little salt | 鹽小許
1/2 teaspoon black pepper
1/8 teaspoon hot chili powder


(B) Filling | 餡料 :
50g Beef (or other meat)
50g Spinach (cooked and squeezed, final weighs 50g)
1 big potato (about 240g)
1/3 pc medium size onion (about 50g)
2 gloves garlic, chopped
1 teaspoon Chinese shaoxing wine
1/8 pc Red apple, cubed (or a few pieces broccoli)
2 tablespoons olive oil (divided)
little black pepper
little salt
200g Basic White Sauce (Steps | 做法)
20g Whipping cream (optional, if the filling not wet enough)


(B) Topping | 批面 :
80g Shredded cheese

  1. White sauce (Steps); prepared in advance, ready for use.

  2. One 9" spices pie base (Steps), prepared in advance.

  3. Preheat oven to 210°C 20 minutes before baking.

  4. Cut potato into 1cm cube, immerse in salt water for 2~5 minutes. Drain the salt water. Add running water until potato is covered and boil until first boil, change to low heat. Boil until tender, drain, set aside for use. In the same pot, put in spinach and boil until soft, drain. When spinach is less hot, squeeze most of its moisture, set aside for use.

  5. Heat little olive oil on a pan, put in chopped garlic and onion, stir fry until soft, set aside.  Heat little oil on pan, put in garlic and little curry powder until aroma, fold in beef pieces, add wine and salt, when it is nearly done, fold in potato and spinach from (4), add apple, white sauce, mix well, if the sauce appear not enough to cover the fillings, add 20g whipping cream. Off heat. Transfer to the pie base, level until even.

  6. Sprinkle shredded cheese on top.

  7. Bake in preheated oven and adjust it to 200°C for about 20 minutes or until the top is bubbly.  Let cool a bit before slicing.
