Baked Cheese Cake with Rum soaked Blueberry | 酒香藍梅芝士蛋糕

Cheese cake with Rum soaked blueberry goes great with an acidic drink or a cup of coffee!

Ingredients | 材料 :
  • Yield : Two 6" cake | 兩個6"蛋糕

Pie base | 批底 : One 6" chocolate biscuit base (Steps)

Stuffing | 餡料 :

250g  Cream cheese, room temperature | 奶油乳酪,室溫回溫

  40g  Caster sugar | 細砂糖
100g  Natural Yogurt (or sour cream) | 純乳酪(或酸忌廉)
110g  Egg, beaten | 兩只雞蛋 (約110g),打勻

  22g  Cake flour | 低根麵粉

  11g  Rum (1 tablespoon) for soaking dried blueberry | 朗姆酒 1湯匙 (浸藍梅乾用)

  20 pcs   Dried blueberry | 藍梅乾

Steps | 做法 :

  1. 藍梅乾先用朗娒酒預先一晚浸好
  2. 奶油乳酪,室溫回溫
  3. 焗爐預熱至220°C。
  4. 攪拌盆中放入奶油乳酪。
  5. 以電動打蛋器攪拌至柔滑乳霜狀。
  6. 加入乳酪和細砂糖,攪滑均勻。
  7. 將打散的蛋液分3至4次加入,仔細地混合。
  8. 篩入低根麵粉,以手動打蛋器拌勻至完全融合。加入浸藍梅乾的朗娒酒
  9. 把麵糊倒入已經冷卻好的模型內。晃動模型,平整表面。加入用朗娒酒浸好的藍梅乾。
  10. 放入已預熱焗爐並調低至170~180°C焗約25鐘,取出稍為放涼。
  11. 放涼後,利用膠刮刀沿邊輕巧扣出蛋糕,用烘焙紙放蛋糕面反轉蛋糕,再轉到涼架(蛋糕面向上)完全放涼。
  12. 放冷凍起碼3小時後(冷凍24小時後質感更好)才切吃。
  13. 芝士蛋糕配微酸的蘋果汁或咖啡,非常搭配。

  1. Soak dried blueberry in rum one night before.
  2. Put cream cheese in room temperature until slightly soft.
  3. Preheat oven at 200°C.
  4. Put softened cream cheese in a large mixing bowl. 
  5. Beat cream cheese at high speed until fluffy and foamy.
  6. Add yogurt and sugar, beat well.
  7. Add beaten egg in 3 to 4 portions, beat well after each addition.
  8. Add sieved cake flour, hand whisk well quickly..
  9. Pour mixture into the chilled mold, level to even. Put in rum-soaked blueberries.
  10. Bake in preheated oven, adjust it down to 170~180°C and bake for about 25 minutes. Take out and leave cool with mold. 
  11. Take the cake out with a spatula and reverse the bake with a baking parchment, cool on rack with cake top facing up.
  12. Fridge for at least 3 hours (24 hours even better) before slicing and serving.
  13. The cake goes well with an acidic soda or a cup of coffee!
