Green Tea Cake | 抹茶蛋糕

Fragrance of green tea!

Ingredients | 材料 :
  • Yield: 2 numbers of 15cm diameter cakes + 12 numbers 5cm cup cakes 
200g  Cake flour | 低根麵粉 (A)
  10g  Green tea powder | 綠茶粉 (A)
1/2 tsp Baking powder | 泡打粉 (A)
100g  Caster sugar | 細砂糖
  25g  Honey | 蜜糖
120g  Melted Butter | 焦牛油液 (Steps | 做法)
  5 Eggs (around 260g) | 雞蛋

Steps | 做法:

  1. 兩個直徑15cm(可脫底)圓形蛋糕模,1個直徑5cm杯子蛋糕模,掃油備用。
  2. 預先做好焦牛油液 (做法)
  3. 粉類(A)過篩備用。
  4. 焗爐以200°C預熱。
  5. 將雞蛋打入碗中攪拌,攪拌一下,加糖,拌勻。
  6. 加入蜂蜜,拌勻。
  7. 分2~3次加入已過篩的粉(A),用橡膠刮刀翻拌至完全融合。
  8. 用篩加入焦牛油液,迅速拌勻。
  9. 麵糊放入冰箱30分鐘。
  10. 刮麵糊入擠花袋,擠麵糊入模內至七分滿。
  11. 焗約18〜20分鐘,直到在中心插入的牙籤出來乾淨。
  12. 取出放架上待涼。

  1. Buttered baking molds, two numbers 15cm diameter base detachable cake mold, and one 5cm diameter cup cake mold, set aside.
  2. Melted butter prepared in advance (Steps).
  3. Sift powder (A), set aside.
  4. Pre-heat oven at 200°C.
  5. Put eggs into a mixing bowl, whisk a little, add sugar, whisk well.
  6. Add honey, whisk well.
  7. Fold in sifted powder (A) in 2~3 portions. Mix well with a scrapper.
  8. Pour in melted butter with a sift and mix well quickly with a scrapper.
  9. Fridge batter for 30 minutes. 
  10. Scrape the batter into a piping bag then extrude batter into the molds, up to 75% maximum.
  11. Bake for about 18~20 minutes or until a toothpick inserted in the center comes out clean.
  12. Cool on rack.
