Baked Cheese Cake with Rum | 香烤朗姆酒芝士蛋糕


First time baking cheese cake with Rum!
加了朗姆酒的芝士蛋糕也不錯吃!




Ingredients | 材料 :
  • Yield : One 6" cake | 1個6"蛋糕 

Pie base | 批底 : One 6" chocolate biscuit base (Steps)

Stuffing | 餡料 :
125g Cream cheese, room temperature | 奶油乳酪,室溫回溫
  20g Caster sugar | 細砂糖
  45g Whipping Cream | 奶油
  53g  Egg, beaten | 雞蛋,打勻
  11g  Rum (1 tablespoon) | 朗姆酒 1湯匙

  11g Cake flour | 低根麵粉
1 teaspoon orange peels (optional) | 蜜餞橙皮 (可選) (Steps)

Steps | 做法 :


  1. 奶油乳酪,室溫回溫。
  2. 焗爐預熱至200°C。
  3. 攪拌盆中放入奶油乳酪,以電動打蛋器攪拌至柔滑乳霜狀。
  4. 加入奶油和細砂糖,攪拌均勻。
  5. 將打散的蛋液分3至4次加入,一邊仔細地混合。加入朗姆酒,攪拌均勻。
  6. 篩入低根麵粉,以手動打蛋器拌勻至完全融合。
  7. 把麵糊倒入已經冷卻好的模型內。晃動模型,平整表面。加入少量蜜餞橙皮 (可以不加)。
  8. 放入已預熱焗爐並調低至180°C焗約25分鐘。取出扣出蛋糕放涼架。
  1. Put cream cheese in room temperature until slightly soft.
  2. Preheat oven at 200°C.
  3. Put softened cream cheese in a large mixing bowl, beat with an electric egg mixer at high speed until fluffy and foamy.
  4. Add whipping cream and sugar, beat well.
  5. Add beaten egg in 3 to 4 portions, beat well after each addition. Add rum, mix well.
  6. Add sieved cake flour; whisk well quickly.
  7. Pour mixture into the chilled pie base mold, level to even. Put in orange peels (optional).
  8. Bake in pre-heated oven and adjust it down to 180°C, bake for about 25 minutes. Take out and remove from mold, let cool on rack.
